Panqueques de Algarrobo | Carob Pancakes

 

El Algarrobo es una planta versátil que ofrece una gran alternativa al chocolate. Sus vainas contienen una pulpa dulce y comestible, que una vez seca y asada, se convierte en una pulpa que se muele. El polvo que sale, se convierte en harina de algarrobo (mas comúnmente conocido como polvo de algarrobo). Es muy similar al cacao en polvo en color y lo podes substituir uno a uno en cualquier receta que contenga chocolate. Lo único diferente es su sabor y textura natural. Su composición también varia, ya que el algarrobo es un producto natural, no lácteo, bajo en grasas y calorías y alto en fibra. Es libre de cafeína, alto en calcio y ayuda a la digestión. Si tenés chicos, es genial como substituto ya que ofrece todo el sabor sin las cosas malas del chocolate!

El algarrobo viene en diferentes formar: en harina, que es similar al cacao en polvo, y lo podes usar en leche con chocolate o chocolate caliente. También lo podes combinar con harina integral para hornear. Además, viene en chispitas, ideal para galletas, barritas, tortas o mi receta de panqueques. A pesar de que su gusto es un poco amargo, cuando lo endulzas queda genial!

Carob is a versatile plant that can be used as a great alternative to chocolate. The pod contains a sweet, edible pulp. Once dried and roasted, the pulp is ground into a powder called carob flour (but more commonly referred to as “carob powder”). It’s similar to cocoa powder in color and can be substituted one-for-one in recipes, but carob is unique with its own special flavor and texture. Unlike chocolate, carob is non-dairy, low in fat and calories and high in fiber. It’s caffeine free, aids digestion and is very high in calcium. It’s a great product if you have kids, because it adds the chocolate taste without the unhealthy nutrients.

Carob comes in different forms: its pods are processed to make flour that is similar to cocoa powder, which you can use to make a beverage similar to chocolate milk or hot cocoa. You can combine carob powder with wheat flour for baking. It also comes in chips, perfect for cookies, bars, cakes or this pancake recipe. Even though it’s a bit bitter on it’s own when sweetened it’s wonderful.

Panqueques de Albarrobo

Ingredientes

  • ½ 1 taza de leche
  • 2 huevos
  • 1/2 taza de harina sarraceno
  • 4 cdas de miel pura
  • 2 cdas de chispitas de algarrobo
  • 1 cda de polvo de hornear
SALSA DE FRUTILLAS (FRESAS)
  • 1 taza de frutillas cortadas
  • 2 cdas de miel pura
  • 1 cda de aceite de coco

Preparación

  1. Mezclar todos los ingredientes húmedos en un recipiente (leche, huevos, miel).
  2. Lentamente añada la harina, chispitas de algarrobo y polvo de hornear, hasta que todos estén bien mezclados.
  3. Calentar una cucharada de aceite de coco en una sartén antiadherente y poner aproximadamente 1/4 de taza de la mezcla para cada panqueque.
  4. Freír durante unos 3 minutos, por un lado, darlo vuelta, y freír durante 1-2 minutos del otro lado.
  5. Para la salsa, combiar las frutillas, miel y aceite de coco en una sartén.
  6. Cocinar a fuego medio-alto, revolviendo ocasionalmente. Continúe revolviendo, y aplaste algunas frutillas con una cuchara de madera o espátula resistente al calor para ayudar a producir el jarabe. Cocinar hasta
    que la salsa espese, aproximadamente 15 minutos.
  7. Servir las crepes calientes con una cucharada de yogur griego y la salsa de frutillas caliente para un sano y rico desayuno!

Carob Pancakes

Ingredients

  • 1 cup of skim milk
  • 2 eggs
  • 1/2 cup of buckwheat flour
  • 4 tbs. of raw honey
  • 2 tbs. carob nibbs
  • 1 tbs baking powder
STRAWBERRY SAUCE
  • 1 cup of slices strawberries
  • 2 tbs of raw honey
  • 1 tbs coconut oil
EXTRA
  • Greek Yogurt

Method

  1. Mix all of the wet ingredients in a bowl (milk, eggs, honey).
  2. Slowly whisk in the four, carob nibbs and baking powder, until all mixed well.
  3. Heat a tablespoon of coconut oil in a non-stick skillet and ladle about 1/4 cup of pancake mix into the pan for each pancake.
  4. Fry for about 3 minutes on one side; flip; fry for 1-2 minutes on the opposite side.
  5. For the sauce, combine strawberries, honey and coconut oil in a saucepan. Cook over medium-high heat, stirring occasionally. The mixture will sizzle for a while, but then juice will begin to form. Continue stirring; mash a few
    strawberries with a wooden spoon or heat-proof spatula to help produce the syrup. Cook until sauce thickens, about 15 minutes.
  6. Serve the pancakes warm with a dollop of greek yogurt and the warm strawberry sauce on top for a great and healthy breakfast!
