Condimentarlas con aceite de oliva, sal, pimienta y paprika.
Asar en el horno por 20 minutos, hasta que estén doraditos y crujiente en los costados.
Mezclar todos los ingredientes del aderezo y dejarlo a un lado.
Armar la ensalada con todos sus ingredientes y servir con el aderezo a un lado… o podes mezclar la arugula con el aderezo y servir junto al resto de los ingredientes.

VEGETARIAN NICOISE SALAD
INGREDIENTS
ROASTED SWEET POTATO
1 medium sized sweet potato, chopped into 1-inch pieces
1 tablespoon olive oil
ó tablespoon of paprika
Salt and pepper
DRESSING
1 tablespoon of Dijon Mustard
Juice of 1/2 lime
1/4 purple onion, finely chopped
1/2 garlic clove, minced
1 tablespoon of honey or agave
Chopped parsley
Salt and Pepper
SALAD
1 cup of arugula
1/2 cup green beans, blanched and chopped
1/2 cup chickpeas, rinsed and drained
1/2 cup cherry tomatoes, sliced
1 hard-boiled eggs, sliced
METHOD
Preheat oven to 350F/180C.
Arrange chopped sweet potatoes on a baking sheet.
Drizzle with olive oil and toss with paprika, salt and pepper.
Roast in the oven for 20 minutes or until golden brown and crunchy on the edges.
Whisk salad dressing ingredients together and set aside.
Assemble the rest of the salad components and serve dressing on the side.
Or toss salad greens together with the dressing, green beans, chickpeas, and sweet potatoes, tomatoes and then top salad with the egg.
